Chicken & Avo Tostada
Have you ever found one wrap on the plate to be underwhelming? If you like to eat with your eyes then this is a great meal for you. It gives you the perception that you are eating a lot of food plus it’s fun and different. It’s basically a re-creation of your chicken & avo wrap.

Ingredients
- 1 x 25cm whole wheat wrap
- 60g chicken, cooked and cut into strips or shredded
- half a small avocado, sliced or mashed
- 2 tablespoons plain cottage cheese
- 1 handful chopped baby spinach or rocket
- 1 medium tomato, chopped
Method
- In a hot pan brown both sides of your wrap, you will notice that it starts to go crispy. You can also do this under the grill in your oven.
- Place the wrap on a plate and cover with the cottage cheese.
- Top with the baby spinach, tomato, avocado, and chicken. season with salt and pepper.
- With a large knife, cut into pizza slices and enjoy!
Notes
- Replace chicken with any protein sauce (beef, ostrich, tuna, etc).
- For a vegetarian option replace the chicken with tofu or soya beans.
- For a gluten-free option replace the wrap with a gluten-free wrap
- Other toppings that go well include gherkins, pickled onion, red onion, and grated carrot.
