If you don’t have a lot of time to cook, thai fish curry is a very easy and quick meal to put together. It shouldn’t take you more than 15 minutes and it will still taste amazing. This is also another great way to include more fish into your weekly diet.
Recipe Thai Fish Curry
Serves 4

Ingredients
- 3 tbsp red curry paste
- 1 broccoli, cut into small florets
- 2 zucchini, ends trimmed and sliced thinly
- 2 carrots, sliced thinly
- 240ml lite coconut milk
- 500ml vegetable or fish stock
- 400g white fish (fish options such as hake, basa, kingklip, etc.)
- 500g steamed brown rice
Method
- Add 1 Tbsp extra virgin olive oil to a saucepan on high heat.
- Add curry paste, once fragrant (1-2 minutes)
- Add broccoli and zucchini and stir to coat.
- Add stock, water, and coconut milk. Stir to combine.
- Once the pot is simmering, add fish and cook fish for 2 minutes until the fish flakes apart easily.
- Serve with steamed brown rice.
