Recipe Salmon Kebabs
Salmon is a fatty fish rich in protein, Omega 3 fatty acids and vitamin D. We should be including fatty fish in our diet regularly because of its high nutritional composition and health possible benefits.
Omega 3 fats are essential fatty acids and one of the healthiest fat options. It is a natural anti-inflammatory reducing joint swelling and pain in Rheumatoid Arthritis. It is protective against Heart Disease, may improve ADHD symptoms, and may be helpful in cases of Depression and Alzheimer’s Disease.
Rather then taking supplements you can get omega 3’s naturally from foods like salmon, trout, mackerel, pilchards, sardines and tuna.
A good replacement for meat on a braai would be something like salmon and what easier way to cook it then as a kebab!
Recipe
Makes 5-6 kebabs
Ingredients:
- 500 g fresh or frozen salmon fillets
- 3 Tablespoons soya sauce
- 1 Tablespoon fish sauce
- Juice of 1 lime
- ½ teaspoon fresh grated lime zest
- 1 teaspoon chopped jalapeño
- Handful chopped coriander
- 1 large zucchini sliced or chopped vegetables of your choice.
- Metal or wood skewers (if using wood, soak in water for at least 30 minutes to prevent burning)
- Thaw salmon if frozen. Cut the salmon into chunks and place in a large ziplock bag. Add soya sauce, fish sauce, jalapeño’s, lime and lime zest, and coriander. Seal tightly and shake to combine. Marinade in refrigerator for no longer then 30 minutes.
- Remove salmon from the bag. Thread the salmon on the skewer with a slice of zucchini between each piece of salmon.
- When the braai is ready, place skewers on grill. Cook uncovered for 6-10 minutes, rotating every few minutes, until grill marks appear and fish is flaky when tested with a fork.
- Optional: drizzle with Marinade to serve.
