Chickpeas are a high fiber legume that is also a great source of protein in a plant-based diet. Roasted chickpeas can make a tasty snack option, addition to a salad, or be the star of a meal.
To get your chickpeas nice and crunchy, it only takes about 10-15 minutes in the oven so it can be a quick snack that you make fresh, or you can make a big batch that you can keep in the fridge and take as you need. You can double or triple the recipe below to make a bulk batch.
Recipe
Makes two servings as a snack, or one serving as a main of roasted chickpeas.
Ingredients:
- 1 tin of chickpeas
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon smoked paprika
- 1 teaspoon garlic
- 1 chili (optional)
- 1 teaspoon of oil (optional, this is just to get the seasoning to stick)
- Salt and pepper to season
- Mint to garnish (optional)
Method
- Heat oven to 180 degrees. You can also do this in the air fryer which you can also preheat to 180 degrees
- Use spray & cook or baking paper to line a baking tray. Mix all the above ingredients (except mint) in the baking tray and put into the oven to roast.
- Bake in the oven/air fryer for 10-15 minutes or until golden brown.
- Remove from the oven and allow to cool in the try, they should become crispy on cooling.
- Put the roasted chickpeas in a bowl and add chopped mint (optional)
