Smoked Salmon and Avo Sandwich
2 slices of low GI, wholewheat or rye bread topped with cottage cheese, rocket, avocado, and smoked salmon. can be served as a closed or open sandwich.

Ingredients
- 50g smoked salmon
- 2 slices low GI wholewheat/dumpy seed/rye bread
- 2 Tablespoons plain cottage cheese
- Handful of rocket
- 1 medium gherkin, sliced
- Half a small avocado – cut into cubes or sliced
- Lemon – to squeeze for juice
Method
- Top both slices of bread with your cottage cheese, then your rocket, gherkins, and avocado. Top with your salmon and squeeze the juice of half a lemon over the top.
- Serve either as a closed or open sandwich.
Notes
Other ingredients that would go well include red onion, capers, tomato, and pickled onion.
